A lovely weekend

I had quite a big day on Saturday. A lovely barbecue, a great kick of the AFL ball, and overall an awesome time in the park. After that we headed to a few pubs and then out for some bowling.

After the big night of bowling on Saturday I ended up deciding to take Sunday fairly chill. I went to the AFLW game with a few mates, where the Swans beat Essendon. After that we headed down to the pub for a beer, and some mates split a veggie roast.

After seeing their roast and wanting a piece for myself I decided to make a roast chicken for dinner. I went to Aldi, bought some potatoes, brocollini and a chicken.

Back home I spatchcocked the chicken, patted the skin dry a bit, then marinated it with some olive oil, dried rosemary, garlic, salt, pepper, and lime juice (didn’t have any lemons on hand).

I peeled, quartered and boiled some potatoes, then tossed them in a sieve to get the outsides a bit fluffy. I chucked them in a baking tray with a bit of salt and oil, put the chicken on top, and roasted for around an hour, taking the chicken out to rest at around 50 minutes.

I charred up the broccolini on my carbon steel pan that was definitely too small, while my dad made some gravy with the drippings from the roast.
